About Simone Onorati:
Simone Onorati is a passionate Italian bartender, born in 1991 in Anguillara. Growing up with a father who owned a steak house in Rome, Simone initially dreamt of becoming a chef. However, his love for the bar emerged after high school, leading him to study at one of Rome’s most iconic bar academies. He quickly advanced in his career, working in various high-profile bars and restaurants, including The Gibson in London and the Dry Martini. Since 2019, Simone has been based in Rome, where he has significantly contributed to the cocktail culture at the Jerry Thomas Project speakeasy.
